Gluten free Chocolate Chip Cookies 🍪

There’s no doubt, no matter where you live, you’ve been impacted by the coronavirus recently. It’s on every news station, social media outlet, and seems to be in every conversation. It can be emotionally exhausting to read, see and be surrounded by everything 24/7, all while not being able to actually “go and do” our normal things. There are so many of us full of anxiety and worry- I would love to read below in the comments (judgement free!!), how you’re handling this? How can my family pray for you during this? I know I have readers from all over the world living with different, difficult situations- and I would love to specifically pray for you today. When things go haywire here in Missouri, what do I do? I bake! I’ve been baking a lot of things lately but let me tell you, these cookies have been my “Go To”- they’re so quick, easy and don’t take anything special! They come out perfect… every… single.. time….

So these came from my sister- apparently these are my brother in laws favorite cookies! I normally change up a few things to make a recipe mine” if I haven’t come up with it myself… take out some sugar, make a recipe a little healthier etc… but not this one. The only thing I substituted was gluten free all purpose flour. They’re so easy, and delicious, I can’t help but make them at least once a week while we’re staying home. (My waist line is not going to appreciate this!!)

I simply started by creaming the brown sugar, sugar and the butter/margarine. Then I add the eggs (one by one of course ;))

Once all that is incorporated, I add the dry ingredients and mix it in, and hand stir the chocolate chips in! That’s literally it. I put these bad boys in a 375° oven for 9 minutes, and they come out delicious. You could cook them a little longer if you like them a a little more “done”. We like ours a little gooey on the inside and crunchy on the outside!

Amazing Gluten Free Chocolate Chip Cookies

Ingredients

1/4 cup margarine

3/4 cup unsalted butter

1/2 cup brown sugar

1/2 cup white sugar

2 eggs

1 teaspoon baking soda

1 teaspoon salt

1 teaspoon vanilla

2 cups of gluten free all purpose flour ( I used Bob Reds Mill 1 to 1 Baking Flour)

1 1/2 cup chocolate chip’s

Directions

Cream the butter, margarine and sugars together.

Add the eggs one at a time.

Once creamed, add the dry ingredients mixing until combined. Stir in the chocolate chips by hand.

Bake on a no stick (or greased) cookie sheet for 9 minutes on 375°

    Thanks for this. I smiled at your “go and do” because we suddenly got gifted free data on our phones from our cell company, and free wi-fi in my husband’s truck, by the truck company. I was like, “That’s awesome! So I can turn on my data when we’re out and about, to try to get work (even though we’re not going anywhere), and we can use the wi-fi in your truck…(even…though…we’re…not going anywhere?” Well, they tried! Just feels great to have freebies and gifts, right?! We’ll try the cookies, tomorrow. My blunder batch that turned out lovely is gone as of today. And when we’re supposed to be staying at home, why, oh, why, are we finding ourselves going to the store SO OFTEN nowadays? Oh, yeah, because last time we went there was nothing, so we must go try again;-) Love you, girl! We are trusting God through this new adventure/calamity, depends on where you find yourself (mentally) what you call it, right? He is in control, and we are His, always trusting, and reminding ourselves to trust him even MORE!
