Loaded Cauliflower Bake

Vegetables. They will forever be my kids enemy. I, however, love them. I could eat veggies for every meal, by themselves… usually without meat.

Now don’t get me wrong- I love meat- but I sure do love a good ol’ bowl of steamed veggies… or a huge garden fresh salad. Yum.

My kids on the other hand- run the other way. It’s exhausting trying to get them to eat anything healthy. I blame this all on my husband who is the biggest child of them all when it comes to vegetables. I really love him, but his “anti- vegetable” contribution I could do without 😂

Tonight I was just sure they were going to go head over heels over this amazing cauliflower bake- I mean, it’s not even really healthy after all the stuff that’s in it!!

But they weren’t too impressed. My 6 year old likes to dissect everything and ask what’s in EVERY.SINGLE.RECIPE. Of course I don’t tell her- and make her try it…. but good grief, I didn’t realize I was on an episode of Chopped every night! I swear these people that live in my house are harder than TV judges 😂

I do think it’s a texture thing for them though- because I thought this recipe was SPOT ON!!! And Ryan (gasp) actually cleaned his plate!! It could’ve been the side eye I kept giving him… or the threatening tone in my voice, but I’m going to go with he LOVED it! He even said he’d take it in his lunch tomorrow! (Jenetta said she’d believe it when she saw it 🙄)

To tell you the truth- it was so good that I didn’t let either of the the helpings on the girls plates go to waste!! And ease? Let me tell you about that! It was so easy to make, which in my books gets 5 stars.

So to start off, I steamed my cauliflower for 10 mins. I cut it up into tiny bite size florets- I’m sure there is a “proper way” to do this… I’m not going to lie, I actually haven’t steamed cauliflower before- so I looked up the best way to disassemble this thing.. (thank you google) and I glanced over it… but then the water was boiling… and I had a SHORT amount of time before the Hubs and the oldest kiddo was due to be home… which meant I had to get this thing made PRONTO before they saw what went into it- or all hope would be lost!

So do a better job of cutting up your cauliflower or it’ll look like a cauliflower crime scene (like mine) either way- it all steams the same!

While that cauliflower is steaming, I mix up the rest of the delicious goodness!

In a bowl add your sour cream, softened cream cheese (I actually microwaved it until soft so it wouldn’t crush the cooked cauliflower) shredded cheese, salt, pepper, and garlic powder.

Be sure to drain your cauliflower after you’ve steamed it – you want to get as much liquid out as you can! Then toss it in the cheese bowl. You’ll also want to put half your bacon bits in now!

Gently fold it all together until it’s completely combined. You’ll want to do this with a light hand so you don’t crush your cauliflower!

Once it’s all combined transfer it to a greased 9×13 pan, sprinkle the remainder of your bacon bits on and bake it for 25 minute. It’ll be oozy and cheesy… and simply the BEST!!! But it’s also super hard to resist before you bake it too…. I might or might not have tried a few little pieces…

We did have skillet cooked chicken with this- I might even go as far as to add that to the dish next time! It would be amazing with the addition of that extra flavor too, and would make my meat loving family happy 😉


Loaded Cauliflower Bake

Ingredients

2 cauliflower heads

8 ounces cream cheese softened

1/2 cup sour cream

1 1/2 cups sharp cheddar finely shredded

1 1/2 cups Monterey Jack cheese finely shredded

2 teaspoons garlic powder

1 package of real bacon bits

2 teaspoons pepper

1 teaspoon salt

 

Directions

Cut up your cauliflower florets into bitesize pieces and steam for 8-10 minutes, or until you can put a fork through easily.

In another bowl mix your softened cream cheese, sour cream, sharp cheddar cheese, Monterey Jack cheese, salt, pepper and garlic powder.

After your cauliflower has steamed drain it well and add it to the bowl with the cheeses. Then add half of your bacon bits. Gently toss until completely combined, being careful not to crush your florets.

Once combined place in a greased 9×13 pan and bake on 425° for 25 minutes or until the top is brown.

Serve immediately.

This can be made ahead of time– just don’t bake it until you need it!

      1. When you do make that cauli crust, let me know, because the only reason I’ve been avoiding trying it is, well, you know, the MAKING it part. I could be a dinner guest. ha. And I know…the cauliflower crime scene. I know! I will share this with another friend. I know she’s tried a cheesy cauli whatever and would really enjoy this one, and she’s probably also (aren’t we all?) ready for something new! Thanks.

  2. Sounds delicious! I actually make a Shepard’s Pie with basically this recipe instead of mashed potatoes.
