Elderberry Syrup (to keep the sick away!!!)

I rarely get to enjoy the sunrise… yes I’m awake to see it. I gaze at it as I’m driving or hustling kids out the door, but to actually enjoy the sunrise- something I rarely get to do….. today however- I got to enjoy it! And I snagged some really beautiful pictures to document the fact that I did, so I could share it with you!

This morning I wasn’t taking a day “off” unfortunately and got to catch a sunrise…. our sunrise morning was because I had a kiddo who woke up with a fever and I’m afraid that the flu has finally hit our home. As much as I hate to see any one of my babies sick…. I was secretly so happy to be home today.

The last several days and weeks have been nothing but running constantly- here and there- you all have had days and weeks like that and know that it’s nothing short of exhausting. So to have an excuse to not go anywhere, to give me time to clean the entire house top to bottom (something it desperately needed) to read books and love on my babies, and to watch a sunrise in peace…. I loved it.

When the flu or any sickness hits our house I automatically start thinking about what I need to clean to keep the rest of us from getting it. Of course influenza is awful- it’s a miserable multi-day dreadful illness that seems inevitable…. and the doctors don’t really have anything “good” to help or fix it.

So last year I started really doing some research on healthier alternatives to help 1. Keep us all healthier and 2. Shorten the flu if we were to get it…. and I ran across this magical little thing called Elderberry!!! I’ve been told they grow wild in our fences and fields, I’m going to search for them this year! I purchased a pound of dried European elderberries and it’s lasted me over a year! I only make this up during flu season or when someone gets sick to help boost their immunity, and the rest of ours too!

It’s super easy- I put 1 cup of dried elderberries in a pot with 4.5 cups of water. Then I add my ground cinnamon, ground ginger, and my whole cloves. Whisk it all together and bring it to a boil. Once it’s boiling I drop the temperature down to a simmer and simmer it for an hour.

You’ll then want to strain the berries out and press the juices out in the process. I found the best way to do this was by using an old applesauce maker! If you don’t have one though just use a slotted spoon and press the berries against the side of your pan then strain in a very fine strainer.

Cool your juice down until you can touch it comfortably- you don’t want it to be too cool or the honey you add in won’t dissolve and be clumpy, but if it’s too hot the honey will lose all of its great properties… so I find the perfect temperature is a comfortable warm. When you can touch it with your finger and it’s not too hot then add your honey in to sweeten it! I add 1.5-2 cups of honey, but you can add less. My girls don’t want to drink it if it’s not sweet especially since the berries by themselves have a very tart flavor to them.

I love to drink it hot almost like a tea, but they prefer it cold with ice! It doesn’t matter how you drink it, just get this magical little syrup in your system and it’s sure to help!

(You can also put on top of your yogurt, ice cream, etc!)

Adults- 2 teaspoons

Kids – 1 teaspoon

To boost your immunity take daily or every 3 hours if you start to feel sick. It’s not recommended to give to a child under the age of 3, I would guess because of the honey! Always check with your pediatrician and doctor before trying 🙂


Elderberry Syrup

Ingredients

1cup dried elderberries

4.5 cups water

1 teaspoon ground cinnamon

1 teaspoon ground ginger

7 whole cloves

1-2 cups honey

Directions

add everything except the honey to a pot and bring to a boil. Reduce heat and simmer for an hour. Press/squeeze berries to extract all the juice and strain. When juice is cool to touch add the honey and whisk in. Store in a mason jar with lid in the refrigerator- can be kept for up to a month or two refrigerated.

Adults take 2 tsp daily

Children take 1 tsp daily

If you feel flu symptoms coming on take every three hours until they go away.

This makes about a quart size
