Winter Wonderland… and muffins!

Most of mid Missouri is covered under a blanket of snow….. That blanket is 16+ inches in some parts!!! We’re snowed in with roads completely covered so it could be several days before we are able to venture out. If I’ve said it once, I’ve said it a million times- I’m not a snow fan… however this snow is a pretty one!

These were all taken before the snow really “hit”… it continued to snow for the next 24 hours…. And it’s been told were to expect another storm this weekend!

As beautiful as this snow is, I can see it getting old fast. We get stir crazy quickly! On top of that, when any one of us gets bored… we get HUNGRY. Not really a great thing when you can’t get out to replenish your stock of food… so there are chicken/beef (I combined the two!) nacho’s in the crockpot staying warm, in case the electricity goes out (you can find the recipe in one of my older blogs here – https://life-on-the-ridge.com/2018/12/31/quick-and-easy-gluten-free-loaded-nachos/ ) they make great leftovers and the nachos are delicious on a fresh baked potato (swap the chips for the potato)

I also whipped up some delicious oatmeal muffins! I doubled and tweaked a recipe I found from allrecipes.com, which is always a great place to look for some amazing recipes!

These muffins have a touch of cinnamon, quick oats and instead of flour I ground up oats again for the flour (like I did in my flourless cookies!!) they weren’t too sweet and really filling! The perfect snow day snack!! The fact that they weren’t overly sweet was really nice and made a great base for honey or just eating plain.

Plus they didn’t have a ton of extra ingredients that I don’t usually have “on hand”.. when you’re stuck in the snow, having what you need is super handy!!

Besides letting the oats soak in the milk while I mixed everything else up, I did it all in one bowl and mixed it by hand. If I can keep from having to get my mixer out and only use one bowl (plus the bowl for the soaking oats) then I count that as a huge win!!

So here’s my recipe for delicious gluten free oat muffins!


Gluten-Free Oat Muffins

Ingredients

2 cups of milk

2 cups quick cooking oats

2 eggs

1/2 cup oil

2 cups ground oats

1/2 cup sugar

4 teaspoons baking soda

1 teaspoon salt

2 teaspoons cinnamon

Directions

Preheat oven to 425*

Soak the 2 cups quick oats and milk together while mixing the rest of the ingredients together.

Mix the sugar, eggs and oil together.

Grind your oats into a flour and add your baking powder and cinnamon . Add your flour mixture to the wet ingredients and mix together well. When incorporated add your milk/oat soak and stir.

Fill your greased or silicone muffin tins 3/4 way full and bake for 15 minutes.

*be sure your oats are gluten free.

*the longer you’re able to let your oats soak the better (15 minutes ideally)
